Begin the evening with a bite-sized prelude that pays tribute to the Filipino “bayanihan” spirit. Delicate rice paper rounds are topped with a mini “ensaladang talong” – a lightly grilled eggplant medley dressed with organic tomatoes, onions, and native herbs. A whisper of calamansi vinaigrette and a garnish of edible flowers add brightness and visual appeal.
A refined reinterpretation of the classic sour soup. The broth is a clear, fragrant tamarind and guava infusion enriched with seasonal organic vegetables – radish, okra, and leafy greens—with a choice of sustainable organic shrimp or silken tofu for a vegan option. The tartness and umami balance the senses and evoke memories of home.
A refreshing interlude to awaken the palate. This bright, tangy sorbet made from freshly squeezed calamansi and a hint of mint cleanses the taste buds and prepares diners for the main course.
Paying homage to the iconic adobo, this course offers two parallel interpretations:
A. Free‐Range Chicken Adobo – Locally raised chicken slow‐braised in a reduction of coconut vinegar, low-sodium organic soy, garlic, bay leaves, and star anise, finished with seasonal mountain greens.
B. Vegan Tempeh & Mushroom Adobo – Marinated tempeh and a medley of sustainably foraged wild mushrooms prepared in the same signature adobo reduction, providing a hearty and earthy alternative.

Conclude the meal with a luscious, silky panna cotta made from organic coconut milk and naturally vibrant ube puree. Delicately set and complemented by a drizzle of homemade salted caramel from locally sourced sugar, the panna cotta is garnished with crunchy toasted malagkit rice flakes and a scattering of toasted toasted coconut shavings.
A selection of seasonal tropical fruits, including mango, avocado, local strawberry, pineapple, papaya, and watermelon, providing a light and refreshing end to the buffet.
